Cranberry Glazed Sweet Potatoes
6 med. sweet potatoes, cooked and halved
1 can whole cranberry sauce
1/2 c. water
1/2 c. brown sugar, firmly packed
1/2 tsp. grated orange peel
1 tbsp. butter or margarine
Arrange sweet potatoes in shallow buttered baking dish. Combine cranberry sauce, water, brown sugar and orange peel in saucepan. Mix well and bring to a boil. Cook gently 5 minutes. Add butter and pour mixture over potatoes. Bake at 350 degrees for 30 minutes, basting frequently.
Yield: 4 to 6 servings.
